Chitosan ist Aminozuckerhaltiges Polysaccharid, das aus Chitin gewonnen wird. Chitosan ist ein Gel- und Filmbildner, der das 5 bis 15fache seines Eigengewichts an Fettstoffen binden kann. Chitosan wurde im Jahr 1811 das erste Mal hergestellt.<br \/>\nChitosan ist in hohem Ma\u00dfe f\u00e4hig, Fett zu binden.
